Tossed together Taco Salad

I am the only person who usually eats salad in our house, so Thursday I had a big bunch of mixed green lettuce that was about to spoil so I threw together a taco salad for dinner. And my husband actually loved it! Oh and most of it was done in the crock pot, super simple.

Here’s the recipe for the meat filling (you can use chicken or beef) Since I knew that my kiddos were not going to eat it, I only used a 1/2 pound but you can make as much as you need. 
1. ground beef
2. taco seasoning
3. can of black beans
4. jar of salsa 
Spray and set up your crock pot and then brown the grown beef in a skillet and drain.  Add beef to the crock pot with taco seasoning (I make mine, you can also use a prepackaged mix.  I will post my version below) Pour in black beans and salsa and cook on low! Easy peasy. I started mine at like 10am and we eat at 5pm. 
Taco seasoning:
  • 2 teaspoons hot chili powder
  • 1 1/2 teaspoons paprika
  • 1 teaspoon onion powder
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon oregano
  • 1/4 teaspoon freshly ground black pepper, or to taste
  • 1 pinch cayenne pepper
At about 4pm I started on the taco bowls.  I only had small flour tortillas in the pantry so I made do with those.  Sprayed them with oil and shaped them into a muffin tin, then baked them at 375 degrees  until they were brown and crispy. 

Then I was ready to start plating.  I shoved lettuce at the bottom and added the taco meat then topped with cheese, sour cream and guacamole. But you can add whatever you please.  Red onion and tomatoes would have also been great!
